Vegetarian enchiladas

Enchiladas is one of the traditional Mexican dishes, based on a corn flat cake with filling. Corn tortillas are called tortillas, and without it, in Mexican cuisine, nowhere. This is something like our bread in importance and even more. Mexican tortillas adore and do not imagine life without them. The filling for enchiladas can be either meat or vegetable.

Ingredients:
- Zucchini - 1 piece
- Eggplant - 2 pieces
- Bow - 1 piece
- Mushrooms - 8 pieces
- Tortilla - 12 pieces
- Green onion - 1 bunch
- Salt, pepper - To taste
- Vegetable oil - 2-3 Art. spoons
- Mexican sauce - 1 cup
- Grated cheese - 100 Grams
Grill fried mushrooms, zucchini and eggplants, watering them with oil and seasoning with salt and pepper to taste.
Also fry the onion on the grill.
Once the vegetables have cooled slightly, cut them into cubes.
Fry the tortillas in vegetable oil, so they will be softer.
Dip the pita completely into the sauce.
Sprinkle the tortilla with vegetables, grated cheese and chopped green onions.
Wrap the tortillas in rolls and place in a baking dish.
Sprinkle the dish on top of the remaining cheese and bake it in the oven at 190 degrees for 20 minutes.
