Vegetarian enchiladas

Description of preparation:
Enchiladas is one of the traditional Mexican dishes, based on a corn flat cake with filling. Corn tortillas are called tortillas, and without it, in Mexican cuisine, nowhere. This is something like our bread in importance and even more. Mexican tortillas adore and do not imagine life without them. The filling for enchiladas can be either meat or vegetable.

  • Zucchini - 1 piece
  • Eggplant - 2 pieces
  • Bow - 1 piece
  • Mushrooms - 8 pieces
  • Tortilla - 12 pieces
  • Green onion - 1 bunch
  • Salt, pepper - To taste
  • Vegetable oil - 2-3 Art. spoons
  • Mexican sauce - 1 cup
  • Grated cheese - 100 Grams
  1. Vegetarian enchiladasGrill fried mushrooms, zucchini and eggplants, watering them with oil and seasoning with salt and pepper to taste.
  2. Vegetarian enchiladasAlso fry the onion on the grill.
  3. Vegetarian enchiladasOnce the vegetables have cooled slightly, cut them into cubes.
  4. Vegetarian enchiladasFry the tortillas in vegetable oil, so they will be softer.
  5. Vegetarian enchiladasDip the pita completely into the sauce.
  6. Vegetarian enchiladasSprinkle the tortilla with vegetables, grated cheese and chopped green onions.
  7. Vegetarian enchiladasWrap the tortillas in rolls and place in a baking dish.
  8. Vegetarian enchiladasSprinkle the dish on top of the remaining cheese and bake it in the oven at 190 degrees for 20 minutes.
